So technically even raw, organic green beans are a legume and not totally, 100% purist Paleo, but several researchers have determined that green beans aren’t matured legumes and contain little to none of the potentially inflammatory contents of mature legumes. Do your own google searching (I prefer Pub Med to Dr. Internet), and decide for yourself.
While we don’t eat green beans as a part of our every day Paleo lifestyle, we were 100% okay with adding a serving of these crunchy, sweet greens to our Paleo Thanksgiving.
- Organic, raw green beans
- 1 tsp Coconut Oil
- 1 tsp minced garlic
- 1 tsp grass fed butter
- Salt and Pepper to taste
1) Heat up a large skillet and melt coconut oil. Surface area is really important to get the caramelization on the outside and avoid steaming the beans.
NB: Coconut oil is a must here since we are using high heat for a short period of time
2) Add washed, trimmed and dried green beans, salt and pepper. Quickly stir the green beans until bright green.
3) Add the minced garlic and stir until fragrant, and immediately turn off the heat.
4) Pour into a serving dish and top with grass fed butter and an extra sprinkling of kosher salt.
