With just three simple ingredients, Paleo or not, you may never go back to that marshmallow version!
- Sweet Potatoes (roasted for an even sweeter taste!)
- Grade A Organic Maple Syrup
- Oranges (3) or Orange Juice Concentrate
Roasted sweet potatoes get the most flavor, but if you’re short on time, you can peel, cube and boil them until fork tender.
Whirl in the food processor or use a hand blender, adding in the zest and juice from 2-3 oranges or 3TB Orange Juice Concentrate.
Smooth the top in an oven proof dish that will look fabulous from oven to table, and use the back of a spoon to create little craggy peaks in the top. This will allow maximum surface area for browning and caramelization on top!
Drizzle 1/4 cup of maple syrup (or more or less) on the top and put into a 400F oven for about 15 minute until the top is browned and crispy.
You’ll love this way more healthful version of sweet potatoes, with the sweet citrus tones and crispy top, and even more importantly, your body will thank you. Our three kids ate it and never even asked about marshmallows. They were too busy stuffing their orange faces!
