Turkey-Free Paleo Stuffing Leftovers for Breakfast or Lunch – Paleo Thanksgiving Part 5

This is a great Paleo breakfast or lunch using the Paleo Stuffing Leftovers.  Spicy, sweet and packed with vitamins and protein, this meal will keep you going for hours.


  • 1 tsp Coconut Oil
  • Spinach (4 Cups)
  • Scrambled Eggs (Optional)
  • Red Pepper Flakes (Optional)

Melt coconut oil and toss in washed and dried spinach.

Add a cup of leftover Paleo Stuffing, which is approximately 1.5 ounces ground lamb, 1.5 ounces ground pork, 1.5 cups chopped carrots and 0.25 cups of chopped apples.  Sprinkle with red pepper flakes and optional chopped garlic.

Making Breakfast?  Scramble some eggs and add.

Lunch?  Add in leftover scrambled eggs from breakfast.

Plate and garnish with whatever fresh herbs you have left from Thanksgiving.
